
Meals taste better when they take longer to eat – and like mussels, artichokes involve a fair amount of fiddling about.
They do take a long time to boil – up to 40 minutes or so for a large specimen – but you can also microwave them in about 8 minutes to save time if you’re hungry.
Have them with a teaspoon of butter (34 calories) or dip them in mayonnaise (30 calories) for extra zing.
And remember, when you’ve eaten all the leaves you can cut off the hairy base and eat the heart.
