
A delicious, filling meal with chorizo, manchego and breadcrumbs, which still manages to come in at just 253 calories.
This is an adaptation of the BBC Good Food recipe for stuffed marrow. Marrow is rather bland, and needs to be baked before filling; substituting a halved red pepper is much tastier, and requires less cooking time.
The small amount of chorizo adds a lot of flavour at very little calorie cost. Because the original recipe states peppers as part of the filling, I substitute it with mushrooms for extra bulk.
