Konjac noodles

Konjac noodles are made almost entirely of water. They can be used instead of regular noodles or spaghetti, and a pack typically weighs in at just 12 calories.

You won’t be surprised to hear they’re made of konjac, a root vegetable grown in Asia, that’s also known as elephant yam.

They always come in a packet containing a fair amount of water, and when you open them you may be startled to find they smell strongly of fish (a factor which accounts for their often negative rating on Amazon).

Wash them thoroughly several times under running water to remove the smell, then add them at the last minute to bolognaise sauce, stir fries, or soups. You can see my favourite konjac chow mein recipe here, and my spaghetti carbonara here.

You can get konjac noodles from Holland & Barrett and some larger supermarkets. I tend to order them in packs of 12 from Amazon.
