
The secret to making a low-calorie chow mein is to use konjac noodles, which behave like regular noodles but have virtually no calories.
This recipe uses about 35g cooked duck (from the weekend’s Chinese takeaway, at about 100 calories – although you could use any protein instead). To that I added a couple of mushrooms (8 calories), a sliced carrot (30 calories), a spring onion (32 calories) and a handful of beansprouts (30 calories). Add a dash of soya sauce (5 calories) for flavouring.
The bulk is made up of a packet of konjac noodles (15 calories). Be sure to wash the noodles thoroughly a few times to remove the fishy smell – see here.
