Cauliflower rice

Cauliflower rice is, simply, cauliflower that has been ground up and can be used as an alternative to rice.

You can make it yourself, or buy it from most large supermarkets and health food shops, or you can get a pack of 6 from Amazon here. It’s just 19 calories per 100g, which means a full packet like the one shown here is effectively two servings at 100g each.

It won’t fill you up as much as rice does, but it’s a perfectly acceptable substitute that’s also very low in carbs, in case you’re doing the Atkins diet alongside the 5:2.
